Potato Corn Chowder

I large onion
3 tbsp olive oil
4 c vegetable broth
2 c preferably new potatoes, sliced or cubed if larger
2-3 ears of boiled or roasted sweet corn - sliced off the cob
2 c cream
pinch of cayenne
salt and pepper

Saute the onion in olive oil till translucent. Add the broth and boil the until the potaotes are just about tender but not breaking.  Add the sweet corn and the cream and heat slowly.  Add spices.
