Pumpkin French Toast

Being a fan of everything fall flavored, I love this "french toast", even though doesn't have eggs, it's delicious and easy.

Pumpkin French Toast


c pumpkin
1 1/2 c milk
2 Tbsp cornstarch
2 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp ground cloves
1 tsp vanilla


1 stale baguette, sliced diagonally
oil for cooking

Mix the first set of ingredients together and pour into baking pan.  Dip the bread so it's covered on both sides and let it sit in the mixture for 20 minutes.  Flip and let it sit for 10 more minutes.

Preheat a little oil in a cast iron pan (or similar). Cook the bread until golden brown and a little crispy (about 6 minutes on one side and 4 on the other).
